The Original Yacht

Derived from the Dutch term “jagen”, meaning to hunt or chase, the word Yacht usually refers to a small, fast craft which is excellent for small voyages and short crossings. Originally this meant a fully rigged vessel that was smaller than a pinnace but large enough to be fully decked over.

Defined as such back in 1742, what classified as a Yacht had changed from the years preceding this and would change in the centuries following it. Today, as the capabilities of Yachts increase, everything from a luxury motorized cruise liner to a private family boat is labeled as one, with all the material prestige that comes with it. But however you define this type of vessel today, it has a rich history that should be known by every person who calls themselves a sailor.

The First Yachts

The Yacht was the vessel of choice for many explorers in the 17th Century. Spacious enough to house several men as well as several months’ worth of supplies, including fresh produce to avoid the dreaded scurvy, these Yachts were fast, nimble and seaworthy – perfect for exploring unchartered waters. The Duyfken, which dropped the first western visitors on Australian shores in 1606, was a small 60 ton Yacht and, similarly, the coast of New Zealand was first sighted from the deck of such a vessel 36 years later.

Besides being an ideal exploration vessel, early Yachts also played a pivotal role in many great wars and battles. The Dutch favored the Yacht as armed tenders and the now famous Duyfken was a critical player in the infamous battle against a blockade of Portuguese ships which essentially ended the Iberian dominance of the spice trade in 1601. As warships grew bigger with improved technology, the Yacht settled into the role of courier during war time, relying on its speed to pass on vital information in a hurry.

The Beginnings of Yachting for Pleasure

Boating and yachting for pleasure is almost as old as boating itself. Egyptian Pharaohs recognised the splendor of water travel and were buried alongside elaborate barges to transport them through the afterlife in elegance and style. When the 17th Century Tsar Peter the Great discovered the wreck of a Yacht gifted to Ivan the Terrible over a century before, his own interest in the pastime was piqued. With Russia’s interest from the East and Britain and the Netherlands’ love for pastime yachting slowly spreading into Europe from the West, it was not long before yachting for pleasure was a staple in the European recreational calendar.

For patrons who frequent Manhattan’s finest restaurants, five-star cuisine is now available on private yacht charters at a comparable price. With resumes rivaling many top chefs, Robert Stecker and Jorge Feliciano of Culinary Visions Catering, based in Long Island, New York, are serving an expanding clientele on the water including celebrities, Fortune 500 executives, politicians and heads of state. Will Smith, Tom Cruise, Donald Trump and Steven Spielberg have all sampled their fare.

Mr. Stecker and Mr. Feliciano began their exploration of non-traditional dining aboard the charter yacht Lexington in downtown Manhattan during the post 9/11 business recovery. They now offer French/American cuisine on over 30 luxury yachts available through Prestige Yacht Charters. The ships depart from marinas and clubs throughout the New York Metro area.

Creative gourmet selections are influenced by the seasons because the chefs hand select each ingredient. They prefer components such as venison, pomegranate and black truffles in the winter; sea bass, cherries and morels in spring; lobster, peaches and watercress in summer; and wild-game birds, butternut squash and white truffles in the fall. The chefs often present their preparations personally on beautifully arranged plates.

The following specialties come highly recommended: butter-poached Maine lobster with roasted wild mushrooms, gnocchi and cucumber blossoms; honey-glazed duck with fig, daikon radish and black currant; and Japanese Kobe filet with seared foie gras, spinach and Pinot Noir sauce.

The recipe for one of their signature dishes, “Crisp Paupiette of Sea Bass with Braised Leeks,” is included below.

After eating their fill, and perhaps enjoying tableside dessert presentations for crème brulée or cherry jubilee, diners can walk off their the meal by strolling along the decks, enjoy panoramic vistas, or just relax under the stars listening to the water gently lapping against the hull. The length of the entire experience is the same as top restaurants, about three hours.

The owner of Prestige Yacht Charters, David Hackert, lets diners choose from a wide variety of “host” ships by viewing interior and exterior profiles on his company’s website. All yachts are climate controlled with enclosed dining areas in case of inclement weather.

Crisp Paupiette of Sea Bass with Braised Leeks and Pinot Noir Reduction

Ingredients (yields 4 servings)

For the Paupiette of Sea Bass:

o 4 sea bass fillets, 7 ounces each, skinless, bones set aside for the sauce

o Salt and freshly ground black pepper

o 3 sprigs of fresh thyme: 1 sprig leaf chopped and 2 sprigs halved for garnish

o 2 very large baking potatoes, peeled

o 3 tablespoons unsalted butter

For the Leeks:

o 2 tablespoons unsalted butter

o 2 leeks, white part only, thinly sliced

o Salt and freshly ground black pepper

For the Sauce:

o 1 tablespoon extra-virgin olive oil, for cooking

o 1/2 cup peeled and chopped shallots

o 1/2 cup sliced white mushrooms, caps only

o 1/2 sprig fresh thyme

o 1 cup unsalted chicken stock

o 1 bottle (750 ml) of Pinot Noir or similar red cooking wine

o 1 tablespoon heavy cream

o 8 tablespoons unsalted butter

o Pinch of sugar

o Salt and freshly ground black pepper

o 1 tablespoon minced chives

Preparation

For the Paupiette of Sea Bass:

Make each fillet as rectangular as possible (about 5 inches by 2 inches) by trimming off uneven edges with a sharp knife. Salt and pepper the fillets, and sprinkle them with a teaspoon of chopped thyme.

Using a knife, shape each potato lengthwise by cutting off the rounded outer flesh to form 4 rectangular slices (do not cut off the tips of the potatoes). Using a vegetable slicer or mandolin, cut each potato lengthwise into very thin, long slices. Each potato should yield about 16 slices (8 slices are needed to wrap 1 fish fillet). Do not rinse the potato slices as their starch will help the wrapped slices stick together. Toss the potato slices in 1 tablespoon of melted butter, and add a pinch of salt.

Place a 10-inch square piece of parchment paper on the counter. Choose 8 potato slices of approximately the same length. Place a fillet of fish horizontally at the top of the parchment paper so you can match the length of the potato wrap to the length of the fish. Place the first slice of potato perpendicular to the fish, starting on the left side. Place a second slice overlapping the first one by about 3/8 inch from the left edge. Continue overlapping the potato slices until you have covered an area equal to the length of the fillet of fish.

Center the fish horizontally in the middle of the potato wrap, and fold the edges of the potatoes over the fish to enclose it entirely. Repeat the same process for the remaining fillets and refrigerate.

For the Leeks:

Melt the butter in a pan over medium heat. Add the leeks and sweat until soft, about 4 minutes. Salt and pepper to taste. Keep warm on the side.

For the Sauce:

Heat the oil in a pot over high heat. Add the preserved sea bass bones, shallots, mushrooms and thyme sprigs, and roast for 8 to 10 minutes while stirring often. Add the chicken stock, bring to a boil and cook until completely reduced.

Add Pinot Noir, bring to a boil and reduce by half. Remove and discard the fish bones with a mesh skimmer. Reduce the sauce to 2 tablespoons. Add heavy cream, stir and bring to a boil over low heat. Whip in butter, sugar, and salt and pepper to taste. Strain the sauce with a fine mesh strainer, and keep warm on the side. (If the sauce is too thick, add a little water to thin it.)

To cook the paupiette of sea bass, preheat the oven to 425 degrees F. Melt the remaining 2 tablespoons of butter in a large nonstick pan over high heat. Add the paupiettes of sea bass, and sauté until golden brown, about 3 to 5 minutes on each side. If the fish is very thick, finish cooking in the oven for 4 to 5 minutes.

Presentation

Place a bed of leeks in the middle of 4 warm serving plates, and ladle the sauce around the leeks (about 2 tablespoons per plate). Place a paupiette of sea bass on top of the leeks, and garnish with 1/2 sprig of thyme. Sprinkle the plate with the minced chives.

Tip # 1 Be Strict With Your Guests’ Attendance.

State it clearly on your invites that RSVPs are required and not responding by a certain deadline means they are not “in”. Once you get the required number of guests and confirm them, close your invites. Don’t confirm anyone else. As the organiser, you will get the usual “Can I still come?” routine and your tendency is to please your guests but when you organise a party on a yacht – you just can’t.

Unlike hosting in a hotel – there is simply “no space”.

Tip # 2 Go “Yacht Hopping” Before You Settle On The One

Just like you would “venue visit” when you organise an event. Organising an event on a yacht requires you to do the same except that you are doing this on water! Know your guests – are they cosy with each other? Will they enjoy “squeezing” or do they prefer slightly large spaces? What sorts of activities will you be organising on the yachts? Will you want to cruise? What are their charter fees? All these will help you decide which yacht to eventually choose.

Tip # 3 Know What You Are Getting With The Charter Fees

Really scrutinise the yachts for space constraints, what they allowed you to do or not to do on the yachts, and what goes with the charter fees e.g some yachts come with a fully equipped kitchen and some don’t. Some yachts do not include a generator when cruising – so there is no electricity and you may have to bring your own battery operated equipments when cruising.

Some yachts do not allow you to bring your food or may charge you a “loading fee” if you do. Some yachts have a barbeque pit on board and some don’t. So get to know the details and really know what you are getting with the charter fees so that there are no surprises later.

Tip # 4 Ensure Enough Food For Your Guests!

When you organise a party on a yacht, ensure that you order or stock up enough food and drinks for your guests. Remember, once you set sail, there is no way to get supplies! Some yachts provide a full dining experience with a chef on board, so you do not have to worry about lack of food – you just pay them:)

If however you are getting your own caterer make sure that you plan your meals well. If you plan to BBQ on board, ensure that all your meat and seafood are marinated in advance. Good to hire someone to barbeque for you when your guests are being entertained! Have light snacks, or finger foods as appetizer before you set sail and have staple foods like rice, pasta, baked potatoes – trust me, you get hungrier fast when you are out there cruising:)

Tip # 5 Have Music, Will Travel!

Not all yachts come equipped with fantastic sound systems or piped-in music. So you may need to bring your own boom box or an ipod with speakers and a good music collection. Its nice to have music playing in the background when your guests step on the yacht. So ensure the ambience on the yacht is well taken care of with good music. Or if you have a big budget – hire live jazz musicians to play on the yacht!

Tip # 6 Be Clear With Your Itinerary

When you charter a yacht, it goes by a minimum of 4 hours charter depending on the yacht charter company. Discuss with the yacht representative on what you can do within the 4 hours. There are many things you can do when you organise a yacht party – there is the dinner cruise -you can catch the Musical Fountain or Songs From The Sea and the fireworks at Sentosa from the open sea. Or you can opt for a cruise to the southern seas where they can take you to BBQ on one of the islands. Or you can just party on the yacht at the berth and not cruise. Whichever way you choose, be clear with them on what your plans are, so that they can arrange with the skipper or the yacht’s captain prior to your event.

Tip # 7 Be Prepared For Anything!

When you organise any event, contingency plans are the norm. The same goes for organising a yacht party. For example, some of your guests may be prone to sea sickness – yes! it does happen. So make sure you have seasick pills – or pre-warn your guests to have them before getting on board. Be prepared for wet weather – in case it rains heavily, the skipper may choose not to cruise as the water is choppy so make sure that even if the yacht docked at the berth, that the yacht is big enough and the guests will still have a good time on the yacht with good food and good music. Make sure you have ice boxes filled with ice, in case the refrigerator do not work when cruising and you still need to chill your drinks. Or there could be power failure when you have a night cruise – so get ready those torches and spare batteries! In short – be prepared for anything:)
